Ingredients:


  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 2 tablespoons instant coffee or espresso powder
  • 1/4 cup caramel sauce (homemade or store-bought)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:


  1. In a saucepan, combine the heavy cream and milk. Heat the mixture over medium heat until it starts to simmer. Remove from heat.
  2. In a separate bowl, whisk together the granulated sugar and egg yolks until well combined.
  3. Slowly pour the hot cream and milk mixture into the egg yolks while whisking continuously. This helps temper the eggs and prevents them from curdling.
  4. Return the mixture to the saucepan and place it over medium-low heat. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon. This should take about 8-10 minutes.
  5. Remove the saucepan from heat and stir in the instant coffee or espresso powder, caramel sauce, vanilla extract, and a pinch of salt. Mix until everything is well incorporated.
  6. Strain the mixture through a fine-mesh sieve into a clean bowl to remove any lumps or cooked egg bits.
  7. Cover the bowl with plastic wrap, making sure the wrap touches the surface of the mixture to prevent a skin from forming. Chill the mixture in the refrigerator for at least 4 hours or overnight.
